The escarpment behind us shaped soils thousands of years in the making. Lake Ontario in front of us holds warmth into the fall and keeps frost at bay in the spring. Between the two sits a remarkable stretch of land where Riesling and Cabernet Franc thrive, farms produce well beyond what this latitude should allow, and the seasons have always determined what comes next.

Terrain begins there.

With Executive Chef Joel LaBute at the helm who began his professional career in Niagara-on-the-Lake now returns after two decades spent at Scaramouche, Langdon Hall, Araxi and Quails’ Gate, along with ten years farming his own land. That experience shapes a kitchen that is precise without being precious and deeply connected to the region. Ontario ingredients, classical technique and relationships with producers we know by name.

Food + People + Place

The wine list begins close to home, with the growers and winemakers shaping Niagara today. Many have travelled the world, learned from great wine regions and returned to make something distinctly their own, helping put this remarkable piece of land on the world stage. From there, the list travels outward with regions that share a sense of place and belonging.

This is food and wine shaped by where we are, served with the kind of hospitality that aspires for a meaningful and personal connection.
